At Farmer’s Chuyo, every coffee is shaped by its processing method. How a coffee is handled after harvest, how the fruit is removed, fermented, and dried, directly impacts clarity, sweetness, body, and overall flavor.


Washed (Wet Process) coffees are fully depulped, fermented in water, then carefully dried. This method emphasizes clarity and precision, producing clean, bright flavors with delicate acidity and a transparent expression of origin. Floral and citrus notes are often prominent, allowing the variety to speak clearly.


Natural (Dry Process) coffees are dried with the fruit intact. As the cherry dries, sugars interact with the bean, creating fruit-forward, layered flavors. Notes can include berries, chocolate, or tropical fruit, with a heavier body and pronounced sweetness.


Honey Process coffees retain part of the mucilage on the bean during drying, resulting in a balanced cup that combines clarity with sweetness. They offer a smooth body and subtle fruit notes without overwhelming the profile.


Anaerobic Process coffees undergo fermentation in sealed, oxygen-free environments. This controlled method allows for complex and expressive flavors, often showing bright fruit, spice, or wine-like characteristics.


Processing is not about one method being better than another, it’s about how each highlights the coffee’s potential. Observing these differences in the cup helps you understand origin, variety, and the decisions made at the farm. Farmer’s Chuyo coffees are a reflection of these choices, each lot expressing its unique character through the method it undergoes.
