This limited-edition Catuai microlot comes from El Mirador, a high-elevation farm in Amazonas, where coffee is cultivated with intention, care, and deep respect for the land. Produced by Maria Castro at 1,800 meters, this coffee reflects both the clarity of its environment and the quiet discipline of family-based farming.
Processed using a washed method with 36 hours of anaerobic fermentation, then slow-dried in solar tents for 20 days, the result is a cup that feels both structured and expressive. The careful drying and fermentation preserve brightness while building a creamy, rounded texture.
In the cup, cacao nibs and caramel form a warm foundation, layered with apricot, lime, and kiwi. Citric acidity brings lift and freshness, balanced by a creamy body and a fruit-forward finish that lingers cleanly.
Named for its panoramic view, El Mirador represents vision and stewardship—qualities reflected in every step of this coffee’s journey. Thoughtfully produced and limited in quantity, this microlot offers a clear expression of place, process, and care.
