How to Brew Loose Leaf Tea Like a Tea Sommelier

Brewing loose leaf tea is simple, but brewing it well can transform the entire experience. Small adjustments in water temperature, leaf quantity, and steeping time can reveal completely different layers of aroma and flavor.


Professional tea tasters, sometimes called tea sommeliers, approach brewing with the same attention to detail that coffee professionals bring to specialty coffee. The goal is not complexity for its own sake, but to allow the leaves to express their full character.

 


 

 

Start With Good Water

 


Tea is more than 95% water, so the quality of the water matters. Fresh, filtered water generally produces the cleanest flavor. Water that is overly mineralized or heavily chlorinated can flatten delicate aromas.


Many tea professionals recommend bringing fresh water to a boil and then allowing it to cool slightly depending on the type of tea being brewed.

 


 

 

Measure the Right Amount of Leaves

 


Loose leaf tea is not pre-measured like tea bags, which gives you control over strength and flavor.


A common starting point is:


1 teaspoon of loose leaf tea for every 8 ounces of water.


Some larger leaf teas, such as oolong or white tea, may require slightly more leaves because they are lighter and less compact.


The beauty of loose leaf tea is that you can adjust this ratio to suit your personal taste.

 


 

 

Use the Correct Water Temperature

 


Different teas require different temperatures because heat extracts compounds at different speeds.


Green tea: 170–180°F (77–82°C)

White tea: 175–185°F (80–85°C)

Black tea: 200–212°F (93–100°C)

Herbal infusions: 212°F (100°C)


Lower temperatures help preserve delicate floral notes in green and white teas, while hotter water helps fully extract the deeper flavors of black teas and herbal botanicals.

 


 

 

Give the Leaves Space to Expand

 


One of the biggest advantages of loose leaf tea is that the leaves can fully unfurl during brewing.


When tea leaves expand in water, they gradually release aromatic oils and plant compounds. This creates a more layered and balanced cup compared to tightly compressed tea bags.


Using a teapot, infuser basket, or French press-style brewer allows the leaves enough room to open and infuse properly.

 


 

 

Pay Attention to Steeping Time

 


Time is another important factor in brewing.


As a general guideline:


Green tea: 2–3 minutes

White tea: 3–4 minutes

Oolong tea: 3–5 minutes

Black tea: 3–5 minutes

Herbal infusions: 5–7 minutes


Steeping longer does not always mean stronger. In many cases it can create bitterness or excessive astringency. Adjusting steep time allows you to find the balance that highlights the tea’s natural sweetness and aroma.

 


 

 

Try Multiple Infusions

 


High-quality loose leaf teas can often be steeped multiple times. Each infusion reveals different aspects of the leaves.


The first infusion may emphasize aroma and lighter notes, while later infusions can reveal deeper sweetness or mineral tones.


This practice is common in traditional tea cultures and allows drinkers to experience the full complexity of the leaves.
